Transform Your Holiday Leftovers into a Delicious Casserole
The holidays are a time for joy, family, and—let’s face it—a fridge overflowing with leftovers! While turkey sandwiches and reheated sides are classic options, why not give those holiday extras a makeover? This easy and delicious casserole recipe combines all your favorite leftovers into a warm, comforting dish the whole family will love.
Perfect for busy weeknights or a cozy dinner after the holiday hustle, this casserole is as simple to prepare as it is satisfying. Gather your turkey, dressing, mashed potatoes, and whatever else is lingering in the fridge, and let’s turn those leftovers into a new festive favorite!
I used ham, although the original recipe called for turkey. I do think it would be great over dressing, but we ate all the dressing! It would be good over rice or pasta, too.
RECIPE – Makes 6 servings
INGREDIENTS:
3 cups cooked, shredded turkey (or ham)
1 cup cream of chicken soup (I used gluten free)
1 cup sour cream
1/3 cup heavy cream
12 oz bag of steamed veggies (I used canned mixed veggies)
1 cup shredded mozzarella cheese, divided
1/2 cup shredded Parmesan cheese, divided
1/2 tablespoon Susan’s Seasoning
DIRECTIONS:
1. Preheat oven to 350 degrees Fahrenheit.
2. In a large bowl, mix together the ham or turkey, cream of chicken soup, sour cream, heavy cream, mixed veggies, seasonings, 1/2 cup of mozzarella and 1/4 cup of Parmesan.
3. Pour it into a greased casserole dish and then top with the remaining cheese.
4. Bake for 35 minutes.
